Ingredients
- 1 cup mixed berries strawberries, blueberries, raspberries
- 2 tablespoons honey
- 1 cup Greek yogurt
- 1/2 teaspoon vanilla extract
- 1/4 cup granola
- 2 tablespoons shredded coconut
- 1 tablespoon chia seeds
- 2 mint leaves for garnish
Instructions
- In a small bowl, mix the berries with 1 tablespoon of honey.
- In another bowl, whisk together the Greek yogurt, the remaining tablespoon of honey, and vanilla extract.
- Layer half of the berry mixture at the bottom of a serving glass or jar.
- Spoon half of the yogurt mixture on top of the berries.
- Add a layer of granola and sprinkle with shredded coconut.
- Repeat the layering with the remaining berries, yogurt, granola, and coconut.
- Top with chia seeds and garnish with fresh mint leaves.
- Serve immediately, or refrigerate for a chilled and refreshing parfait.

– You can substitute Greek yogurt with plant-based yogurt for a vegan version.
– Frozen berries can be used, but be sure to thaw them first.
