Ingredients
  

  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 2 tablespoons honey
  • 1 cup Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granola
  • 2 tablespoons shredded coconut
  • 1 tablespoon chia seeds
  • 2 mint leaves for garnish

Instructions
 

  • In a small bowl, mix the berries with 1 tablespoon of honey.
  • In another bowl, whisk together the Greek yogurt, the remaining tablespoon of honey, and vanilla extract.
  • Layer half of the berry mixture at the bottom of a serving glass or jar.
  • Spoon half of the yogurt mixture on top of the berries.
  • Add a layer of granola and sprinkle with shredded coconut.
  • Repeat the layering with the remaining berries, yogurt, granola, and coconut.
  • Top with chia seeds and garnish with fresh mint leaves.
  • Serve immediately, or refrigerate for a chilled and refreshing parfait.

Notes

– You can substitute Greek yogurt with plant-based yogurt for a vegan version.
– Frozen berries can be used, but be sure to thaw them first.
– Great for meal prep: layer in a mason jar and store in the fridge for up to 2 days.
