Ingredients
  

Crust Ingredients:

  • 2 cups Oreo Cookies Crushed
  • 1/4 cup Butter Melted

Filling Ingredients:

  • 24 oz Cream Cheese Softened
  • 1 cup Sugar
  • 1/3 cup Baileys Irish Cream
  • 3 Eggs

Instructions
 

Prepare the Crust:

  • Combine crushed Oreo cookies with melted butter.
  • Press into the bottom of a springform pan to form the crust.
  • Chill in the refrigerator while preparing the filling.

Make the Filling:

  • In a large bowl, use an electric mixer to beat the cream cheese and sugar until smooth.
  • Mix in Baileys Irish Cream.
  • Add eggs one at a time, beating just until blended.
  • Pour filling over the crust.

Bake:

  • Preheat oven to 350°F (175°C).
  • Bake the cheesecake for 50 minutes or until the center is set.
  • Turn off the oven, open the oven door slightly, and allow the cheesecake to cool in the oven for 1 hour.

Chill:

  • Refrigerate the cheesecake overnight.
  • Serve chilled, optionally topped with whipped cream or chocolate shavings.
