Buckeyes are a delightful treat that combines the creamy texture of peanut butter with the rich taste of chocolate, creating a dessert that's both indulgent and satisfying. This easy, no-bake recipe is perfect for any occasion.

Ingredients
  

  • 1 cup Peanut Butter Smooth, 240g
  • 5 tbsp Unsalted Butter 70g
  • 2 cups Powdered Sugar 240g
  • 1 tsp Vanilla Extract 5mL
  • 2 cups Semisweet Chocolate 340g
  • 2 tbsp Coconut Oil 30mL, Optional

Instructions
 

  • Cream together peanut butter, butter, and vanilla extract until smooth.
  • Gradually add powdered sugar and continue mixing until well combined. Scrape down the sides of the bowl as necessary.
  • Shape the mixture into small balls and place on a baking sheet. Chill in the refrigerator until firm, about 20 minutes.
  • Melt chocolate chips with coconut oil, stirring until smooth. Allow cooling slightly.
  • Dip each peanut butter ball into the chocolate, leaving a small circle at the top uncoated. Chill until set.

Notes

  • Store Buckeyes in a cool, dry place or refrigerate. Best enjoyed within two weeks.
  • If butter is not at room temperature, microwave in short bursts on 50% power until soft.
