- 1 cup Peanut Butter Smooth, 240g
- 5 tbsp Unsalted Butter 70g
- 2 cups Powdered Sugar 240g
- 1 tsp Vanilla Extract 5mL
- 2 cups Semisweet Chocolate 340g
- 2 tbsp Coconut Oil 30mL, Optional
Cream together peanut butter, butter, and vanilla extract until smooth.
Gradually add powdered sugar and continue mixing until well combined. Scrape down the sides of the bowl as necessary.
Shape the mixture into small balls and place on a baking sheet. Chill in the refrigerator until firm, about 20 minutes.
Melt chocolate chips with coconut oil, stirring until smooth. Allow cooling slightly.
Dip each peanut butter ball into the chocolate, leaving a small circle at the top uncoated. Chill until set.
- Store Buckeyes in a cool, dry place or refrigerate. Best enjoyed within two weeks.
- If butter is not at room temperature, microwave in short bursts on 50% power until soft.
